I got asked by people at work about Christmas Cakes, whether i had made them before and how to make them stay moist. So i decided to experiment. Years ago, i had great success with a recipe that used Chocolate Milk.
This is what i did for these mini cakes, soaked the fruit mix in Chocolate milk for a day, to make sure that when baked the fruit was nice and juicy and also had a bit of extra flavour.
I covered each 10cm cake with almond fondant, and then plain white fondant before attaching a nice holly decoration.
Wrapped them in ribbon, boxed up again wrapped in ribbon, and gave these as presents to family and friends. Nice and simple but effective result.
